Piper J. Drake’s Butter Mochi

In FOREVER STRONG, just released January 28, Ying Yue, has been kidnapped and subsequently rescued by Zu, leader of the Search and Protect team. She’s made welcome by Pua with snacks and refreshing drinks. Later, Kalea cooks for the team and the food she provides represents safety and a sense of home. As the chemistry between Ying Yue and Zu grows stronger, Zu finds himself wishing he could cook some of his favorite dishes for her.

Food, the sharing of it, and the heart that might go into the cooking of it is a key element in the way I build my characters and their relationships. It can bring together a team and give you the sense of family, either born or found.

Butter mochi is a Hawaiian treat made with sweet rice flour, resulting in chewy, buttery bars. Some recipes add coconut flakes that result in a toasted, crisp top to this chewy bite. This treat is tasty without being too sweet and it is so simple to make.

In the True Heroes series, these treats are a favorite with both Arin and Mali, made by Kalea. Pua loves them too. They make a great snack or dessert, or even breakfast. No one from the Search and Protect team will judge.

Ingredients

1/2 cup Butter, melted

(plus butter for greasing pan)

5 Eggs

1 tsp Vanilla paste or extract

3 cups Whole milk

1 lb Mochiko sweet rice flour

1 tsp Baking powder

2 1/2 cups White sugar

1 cup Coconut, sweetened flaked

Instructions

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with butter.

Melt 1/2 cup butter. Set aside.

In a medium bowl, beat eggs, then whisk in vanilla and milk.

In a separate larger bowl, stir together the sweet rice flour, sugar, and baking powder.

Pour egg mixture into sweet rice flour mixture and stir to blend.

Mix in melted butter and coconut flakes. Pour into the prepared pan.

Bake uncovered for 1 hour in the preheated oven.

Cool completely, then cut into squares to serve.

We never enjoy fighting the crowds at restaurants on
Valentine's Day. We prefer to stay home and prepare a special
dinner, usually surf and turf, with nice wine and whatever
special dessert we decide to make.

We usually go eat out for my birthday on the 11th, then
on the 14th I cook steaks and baked potatoes. For
dessert, either strawberry cheesecake or chocolate cake.
My husband passed away in 2015 so this year it is only my
boys and myself but I still plan on doing out annual
steak and potatoes. My youngest son surprised me with
Chocolate dipped strawberries from the grocery store
where he works. They are delicious and HUGE.

our local Volunteer Firemen (their big annual fund raiser)
and then distribute the roses to a few elderly widows that
we know. The ladies love it and we have so much fun!
