Autumn Pumpkin Bread

Pumpkin Bread (makes 2 loaves)

Sift together:

3 Β½ cups white flour
1 tsp salt
2 tsp baking soda

Mix:

2 cups of pureed pumpkin
1 cup molasses
1 cup vegetable oil
Β½ cup water
4 beaten eggs
1 tsp cinnamon
Β½ tsp nutmeg

Add dry ingredients a third at a time. Last, add:

1 cup chopped nuts (optional - walnut or pecan are both good)

Bake in well-greased loaf pans (9 x 5 x 3) at 350 F for 45 minutes to an hour
(until a knife comes out clean). Remove from pans and cool on wire racks. This
loaf freezes well, toasts well, and can be served plain or buttered. Good with
cheddar cheese.

I've never made pumpkin bread with molasses, sounds yummy.
