Autumn Pumpkin Bread

website

Pumpkin Bread (makes 2 loaves)

Sift together:

3 ½ cups white flour
1 tsp salt
2 tsp baking soda

Mix:

2 cups of pureed pumpkin
1 cup molasses
1 cup vegetable oil
½ cup water
4 beaten eggs
1 tsp cinnamon
½ tsp nutmeg

Add dry ingredients a third at a time. Last, add:

1 cup chopped nuts (optional - walnut or pecan are both good)

Bake in well-greased loaf pans (9 x 5 x 3) at 350 F for 45 minutes to an hour (until a knife comes out clean). Remove from pans and cool on wire racks. This loaf freezes well, toasts well, and can be served plain or buttered. Good with cheddar cheese.

I would love to try this recipe. I'll have to save this one for when my family is visiting!
