Summer Barbeque Marinade from Jill Marie Landis

Aloha from Hawaii. Here in the islands, it's summer all year long. We do a lot of outdoor cooking! This is my favorite recipe for marinating chicken. I use boneless, skinless thighs and breasts. (I just sort of dump and mix.)

Summer Barbeque Marinade

Place pieces of boneless, skinless chicken thighs and breasts in a large Ziplock bag. (Lots of chicken!)

Mix in a bowl:
1 cup of soy sauce
1 cup of water
2 or 3 tablespoons of sesame oil
(more or less to taste)
At least two teaspoons full of chopped garlic (more or less)
Powdered ginger (1 teaspoon more or less)
Three chopped green onions (white and green parts)

Stir it all up and pour it into the Ziplock with the chicken.
Zip shut and let the chicken sit in it over night in the refrigerator.
Maybe set the bag into a Pyrex dish so it doesn't leak in refrigerator.

Turn the bag over whenever you think about it.

When you barbeque, use a medium flame and turn the chicken often so it doesn't burn.

Don't over cook. Test a piece by cutting open the thick part. If there is no pink, it's done!
