Holiday Potluck

This is a bright dish to sparkle a holiday table.

This recipe is a good old-fashioned Pennsylvania Dutch recipe passed down through family and friends. It brings back lots of warm memories of holidays and family gatherings I have been invited to in friend's homes. I hope you enjoy.

  • 2 1/2 Cups of canned or frozen corn
  • 2 Tablespoons butter
  • 11/2 Tablespoons flour
  • 1 Cup milk
  • 1 Tablespoon sugar
  • 1 Teaspoon salt
  • 1/8 Teaspoon pepper
  • 2 eggs
  • 1 Cup diced peppers (red, green, yellow and orange for sparkle)

Preheat oven to 325°

Beat eggs lightly add half the peppers, set half aside for the top. Then mix in the rest of the ingredients, and pour into a 9" by 11" baking pan or casserole dish. Sprinkle top with remaining peppers. Bake till firm and set. Let stand for a few minutes then serve.
