Recipe and Books

My husband and I live in southern Florida but plan to spend our first summer in the mountains of North Carolina where we can enjoy COOLER WEATHER (whew!) as well as spend some time with our son and four of our grandchildren. We love to hike and enjoy the forests, waterfalls and glorious beauty that the mountains hold. I absolutely LOVE to cook and cannot wait to be able to make huge meals and bake to my heart's content and have the family nearby to help me eat it. One of my favorite dishes is my own recipe that is a takeoff on the Cheesecake Factory's Evelyn's Pasta. My family and friends tell me to call it Connie's pasta as it's so different and chock full of yummy scallops, shrimp, sun dried tomatoes, etc. etc. If interested, I would be more than happy to share this delicious recipe I have put together with anyone. I also love to make pies and many of my friends cannot believe how easy, lowfat and golden my pie crusts are. My favorite is to make cakes with my real buttercream frosting. Decadent! Cut-out cookies, etc.---ah--makes me want to grab my apron and start in. Of course, reading is such a passion of mine as well. I bought the book "Roses" as a delicious read that I can't wait to start when I'm sitting in the porch of our mountain cottage with some iced tea and birds chattering in the background. I may never want to reurn....except of course when it starts to turn cold. Brrr..I cannot handle really cold weather anymore. Yes, life is good and I'm looking forward to a wonderful summer. Wish everyone could join me!
