Cowboy Cookies

My on–going CHANCE, TEXAS series is fast becoming a reader favorite. The newest edition to the series, Gage Chance's story, appears in the novella Christmas Confidential. I just love the holidays, don't you? The things I love the most are baking and EATING Christmas cookies. A reader sent me a wonderful cookie recipe a few years ago that is perfect for my Chance, Texas series and will get baked this year! The cookies are very sweet, but I thought you might like the recipe to try for your family.

 

 

Cowboy Cookies

Ingredients:


1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla extract
2 cups all–purpose flour
1 tsp. baking soda
1/2 tsp baking powder
1 pinch salt
2 cups old fashioned oatmeal
1/2 cup chopped pecans
1 6 oz. package chocolate chips
1/2 cup shredded coconut




Preheat oven to 350°F.

Cream shortening, granulated sugar and brown sugar with a hand mixer or electric stand mixer. Add eggs and vanilla, beat until well blended. Mix in flour, baking soda salt and baking powder.

Add remaining ingredients and mix to combine. (If using a stand mixer, you may want to switch to a dough hook at this point.)

Spoon cookie mixture onto greased cookie sheet. Bake for 8 to 10 minutes, or until bottom edge of cookie is golden. Transfer to a wire rack to cool.
