Ann Lawrence's Family Recipe for Irish Potatoes

3 ounces cream cheese – softened

1/4 pound unsalted butter – softened

1 teaspoon vanilla

4 ounces coconut (or to taste)

1 1/2 boxes of 10X sugar

cinnamon




Cream the butter and cream cheese. Add coconut and vanilla. Stir in powdered sugar. Roll into small balls and then roll in cinnamon.

To give them a "potato" look, drop several times onto waxed paper. This will also remove excess cinnamon.

Makes about 4 dozen. Wrap well and store in the refrigerator.
