FRANCINE SEGAN is a noted culinary historian and food writer who has appeared on hundreds of national TV shows; the Food Network, Discovery, and History Channels; and NPR. She is the author of The Philosopherβs Kitchen and Shakespeareβs Kitchen. Segan lives in New York City. MARK THOMAS is a photographer in New York City specializing in food, lifestyle, and travel photography. His work has appeared in STCβs Endangered Recipes, and he recently completed four books for Williams-Sonoma. Thomasβs work also appears regularly in Bon AppΓ©tit.
