I have my grandmother's recipe for a muffin that can be made with any fruit, nut or even savory like ham and cheese that is not a sweet base, but lets the addition stand on it's own. I make frittatas in my muffin tin. I bake 3 tater tots per in each muffin slot for 15 minutes on 425 degrees. Then take the pan out and smoosh them down with a fork then bake them for 5 more minutes.Then I take it out of the oven, lower the temp to 350 and fill the tin with chopped roasted red peppers, zucchini, yellow squash, onion, garlic, fresh herbs, salt, pepper, swiss cheese, and ham. I whisk 8 eggs with 2 tbsp milk in a medium-size bowl then pour them into each muffin slot until filled to the top. Then I bake the muffins for 15 to 25 minutes until the eggs are set and cool slightly before servings. They're so delicious! (Dianne Robbins 9:50pm September 1, 2017)
