I was born in Texas, so I was raised on Tex-Mex. When we first moved to
Montana, no
one had ever heard of tortillas. But my mother talked the grocery into getting
some
for her and began teaching friends how to make enchiladas. They were a hit –
except
for one friend who claimed her family liked them better using pancakes. :)
My latest book in the Montana Hamiltons series releases two days before
Thanksgiving. So I thought I would share my favorite leftover turkey recipe.
It is really simple and delicious and elevates turkey to another level.
BJs Turkey Enchiladas
3 cups chopped turkey
2 cups of grated Monterey Jack cheese
1 cup sour cream
1/4 cup diced green onions
several diced Jalapenos (to taste)
1 small can of green chilies, diced
1 teaspoon garlic
½ teaspoon salt
1 teaspoon chili powder
2 teaspoons cumin
1 package of corn tortillas
1 large can of enchilada sauce
1. Mix everything but the tortillas in a large bowl.
2.Heat corn tortillas in a skillet on the stove or on a griddle without
any oil just
until they are soft and flexible enough to roll.
3. Put a good amount of filling into the tortilla and roll. Place in a
baking pan (9x13) close together. You can usually get a dozen in the pan if
you’re
creative.
4. Top with your choice of enchilada sauce. I prefer tomato based but I
know my daughter likes the green chili kind.
5. Bake for 30 minutes or until bubbly. Top with more grated cheese, if
you
like.
I serve mine with a vinegar/sugar coleslaw and refried beans.

In the winter, I snowboard (who says you have to be a kid to snowboard). Every
chance I get, I read. I love books. I love stories that take me away, that
surprise
and scare me, that make me laugh and cry. Those are the kind of books I try to
write.
Lately, when not sitting in front of the computer, I've found myself sitting in
front of my sewing machine. I love food. I love being creative.

Our favorite turkey left over is a huge sandwich on rye bread of turkey, stuffing, cranberry sauce and mayo served cold with a large glass of apple cider to wash it all down. (Diane McMahon 8:26am November 23, 2015)
We never have enough turkey left over to do much with except to reheat it, with the stuffing, mashed potatoes, and whatever else is on hand, to have a quick meal when we get hungry the following day. That's usually about all we have on hand. I always try to get a larger turkey, but my Husband has always downsized, since it's the two of us. If I had it my way, I would put some turkey in gravy, let it cook, and make open-faced sandwiches, or I would make pot pies with the leftovers. Turkey Tetrazzini, don't even know if I spelled this correctly. Fell in love with the creamy sauce, proportion of subtle vegetables, turkey, cheese and pasta lightly sprinkled with chopped parsley when I was a child.
