Usually we travel every Thanksgiving to family a few states away. This year,
however, my husband is working, so we’re homebound. I’m pretty excited about
it, but my daughters are bouncing off the walls. Not only do we not have to
drive seven hours each way, but they want to cook the dinner.
I’ll probably make the turkey, but my parents are arriving at the airport at
noon, so the kids are doing mashed potatoes, stuffing, squash, appetizers, and
dessert. They are amazing cooks, but far more adventurous than I am. My
youngest likes to color her homemade cakes blue, black, and green. Not the
Kermit the frog green, but neon oh my God green. The oldest can take any five
ingredients and create something edible. Mostly. I trust them and love when
they help out.
What will the table ultimately look like? I have no idea. I only hope they have
the wine ready for us when we arrive at the door!
If my kids are reading this, this is what I want for dessert, served with LOTS
of whipped cream.
Wicked Awesome Pumpkin Pie
- 1 15 oz can pumpkin
- 1 14 oz can sweetened condensed milk
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon vanilla
- 1/4 teaspoon orange zest
- 1 tablespoon bourbon (should I trust you with this????)
- 1/2 teaspoon salt
- 1 unbaked pie crust (9 inch) (*use gluten free so everyone can enjoy it,
including those sensitive to gluten- yes, that means your younger sister)
1. Preheat oven to 425 degrees F. Mix together the pumpkin, sweetened
condensed milk, eggs, spices, bourbon and salt in medium bowl. Make sure it’s
not lumpy. Pour into crust.. Bake 15 minutes. (please set the timer! Estimates
tend to create burned pies.)
2. Reduce oven temperature to 350 degrees F and continue baking 35 to 40
minutes or until knife stabbed into the middle comes out clean. Cool.
3. Wait for Mom, Dad, and the grandparents before digging in!
A Bostonian by birth, Veronica Forand regrettably lost her Boston accent
while moving from state to state and country to country. Cleveland probably had
the most profound effect on her ability to pronounce the "r" in the word
"park."
She does try to return now and then to visit family and eat long neck clams and
lobster. Summers on Cape Cod are also high on the priority list.
Her experience in crime involves time as a court appointed attorney.
Eventually, she switched fields to where bigger crimes take place, corporate
tax. The allure of spending mornings in her pajamas homeschooling her children
and writing fascinating fiction caused her to change careers again. Now that
the kids are out of the house (in school), she writes romantic thrillers by day
and is the perfect wife and mother at night.
Her experience in romance is limited to one man. Luckily, he's still finding
ways to charm her by taking her on vacations to the south of France, Fiji, and
the Green Mountains when time is short. Avid travelers, they love to roam with
their kids across continents in pursuit of skiing, scuba diving, and the
perfect piece of chocolate.
She's lived in London, Paris, Geneva, Washington D.C., and the accent
destroying city of Cleveland. She currently resides near Philadelphia.
