Every year at Easter time, my beloved aunt would make her Italian Easter Pie.
Aunt Mary came to the USA from Italy, lived with us during my childhood, and in
many ways was like a second mother to me. Now that she's gone, I miss her very
much, especially at this time of year.
In her honor, I created this delicious, easy appetizer, which has been very
popular with my readers: Italian Easter Pie Palmiers (see below for links to the
recipe).
While the French palmier is named after a palm leaf, the shape reminds me more
of a heart and that seemed perfect for my memory of Aunt Mary and her Easter
Pie. I can testify that a bite of this palmier will give you an almost identical
taste to what my aunt made every Easter.

Ok...I should be remembering pretty flowers, beautiful Easter outfits but, really, when I think of spring I hear my mom's voice. She has been gone for over 25 years but there she is, whispering in my ear, have you started your spring cleaning?? I could do it, I'm certainly well trained but do I want to drag out the furniture, wash and polish floors, do windows and I mean Do windows...outside, inside and the drapes, too? Mom, I love you but I'd rather read a good book, sit on the porch and day dream. Ah Spring...
